I don't know about you guys, but I'm tired of thinking of things to eat every night. I'm sick of the same old, same old......
Right now it looks like tuna sandwiches and chicken noodle soup. I'm outta ideas.:thumbdown:

I seem to get stuck in a rut sometimes:
Meatloaf & Mashed Pot
Stuffed Green Peppers
Lasagne
Pot Roast
Beef Stew
Chilli
Those are all my stand-by's for when I don't want to think up a meal.
Hubby doesn't get home til after midnight on the weekends, so tonight was Chicken Noodle Soup and Salad.

Tonight: Leftovers! I made a big pot of Chicken Noodle soup yesterday and since Hubby is away AGAIN, makes it easy.:D
I do know either Friday or Saturday this week we will have corned beef and cabbage.

My grill is always at the ready. Hell, I even take the Webber Baby-Q with me to tailgate in the parking lot after a day of skiing. Chicken breasts marinated in olive oil and balsamic, steamed brocoli and spanish rice. That was last night's dinner. Always cook up an extra three or four breasts to make chicken salads or whatever for lunch...

I had two turkey sandwiches for dinner last night b/c
- I was lazy and didn't want to cook
- I had leftover spinach salad and I found that I like raw spinach on a sandwich. It's surprisingly good!:)

yesterday i made baked ravioli stuffed with cheese...mmmm...
then today i just went to Wild Oats and raided the salad bar, always take home lots of leftovers to put in sandwiches, pitas, or just eat later on.

That would be my fav...if my hubby ate breakfast foods.
He won't eat anything that he can "see" eggs in.
French taost, fried rice..etc.
yea, I know there are alot more bfast foods without eggs,but he won't eat anything for breakfast. So it will be me and the 3 yr old with bacon, sausage, pancakes, freanch toast, and eggs.
Anyone want to come over?

Anyone interested in gourmet type meals, food etc.
I love those fancy 5 course meal restaurants (that I get to go to once very 4 years).
There is a rest in SW PA that has a french chef in an inn that George Washington stayed at. It has a "Prix Fixe" (sp?) menu. You choose the app, main course and dessert for a fixed price. (xtra's - {filet add on a couple $}) the chef special is the mid course and then the cheese plate(platter of cheeses that you choose from). I don't care what the restaurant is like, where it's at, etc....if it has a cheese plate I love it. For those of us in the area it's Chez Gerard in Hopwood (outside Uniontown).
I love these "grown-up" dinners.
Does anyone make these in real life? I try to make as much stuff as I can from scratch (spaghetti sauce, mac n cheese, chicken stock etc). But, I admit there is a limit. Plus sometimes I just don't feel like it.
I feel for those chicks from the 1800's. (or 1900's)

After spending my career as a short order type of cook, I do what I call slam cooking. I can whip up a 4-course meal in 20 min. if I need to.
I hate to cook, so I'm teaching my daughter, but she prefers baking.
Tonite was swiss steak with red potatoes and creamed corn, brown & serve rolls, baby carrots and applesauce. Pink cupcakes for dessert.
Tomorrow ........ PIZZA.

My brother and sister came over for a little dinner party last night. We had pulled barbecue chicken, corn bread, scalloped potatoes, baked beans and blueberry/raspberry cobbler. I love to cook!
For those of you who can't come up with dinner and don't have much time just throw 3-4 boneless, skinless chicken breasts in the crock pot tomorrow morning with 2/3 cup chicken broth and 1 cup barbecue sauce and a little black pepper. Put it on low for 6-7 hours. When you get home, take the chicken out, turn the pot to high, add some cornstarch to thicken the sauce, shred the chicken with two forks, stir it back into the sauce and you've got incredibly tender, yummy chicken to put on rolls, eat with cornbread, spoon over cole slaw. . . whatever you like. It's awesome!

I have this 4-step rule. I don't eat/cook anything that takes more than 4 steps. Your chicken violates this rule. :lol: But actually that sounds really easy and yummy. If only I could get hubby to eat cornbread (childhood trauma, don't ask :scared: ).
My favorite recipe is actually a Nigella Lawson recipe I saw on Oprah once:
1 - put chicken parts, cut up lemons, cut up red onions, rosemary, and some olive oil in a freezer bag.
2 - Freeze until needed.
3 - Take out of bag.
4 - Bake in oven...hot...for awhile....until done. (<---why I don't cook more)
And OH MY GOD did she make the yummiest brownie dessert thing ever on that show. I'll have to see if I can find the recipe, it basically came out tasting like melted brownies. Awesome.

Yesterday after church, we went to this fantastic barbecue place and I had their barbecue shrimp. I'm still drooling. Hubby is out of town this week, so I won't be too fancy this week. I'll probably finish off the pulled pork and salads for the kids.

I always manage to screw up your basic pot roast. I've tried so many different recipes, but it always turns out boring & semi-dry. And I'm on board with Pekmboyd's 4-step rule, but I also won't look at a recipe with more than 10 ingredients. Anyone have a slow-cooker, pot roast recipe I can't screw up?

No corned beef and cabbage in this house. I used to hafta make it every year at our bar. It was a 2 day process. Just peeling all those f-ing potatoes and carrots was enough to give me carpal tunnel. But I must say, they came from miles around just to have it.

I love to cook and even though I am so busy at work, I try to do it all the time because it actually relaxes me.
Saturday night I bought a roasted chicken from the Mexican market down the street and then fake-homemade it up (NOT Sandra Lee style!) by roasting veggies in my roasting pan and reheating the chicken in there so the chicken fat got in there too, then I drained off most of the fat and veggies and took all the drippings to make a gravy with veggie stock and wine and lemon juice and herbs. I served it up with some of the roasted veggies and some homamade buttermilk roasted garlic mashed potatoes.
Tonight it's tacos made with veggie crumblers (I try to cook veggie a lot) and homemeade guacamole.
I also highly recommend a subscription to Cooking Light for people who love to cook. They have quick recipes and more involved ones...I have never tried one that wasn't awesome. I am not a health nut or anything, but most are on the healthier side. It's definitely not Paula Deen territory, but they are not Nazis about butter and cream. I do draw the line when they call for fat free cheese and substitute the regular. Because that's just gross.

Tonight will be shrimp, scallops, broccoli, mushrooms tossed in a nice tomato basil sauce.
Tomorrow is Boboli night - that crust is pretty good and if you get the individual ones everyone can control whats on their pizza.

Well, you can eliminate the sauce-thickening and chicken-shredding steps by serving the breasts whole. I just like the pulled chicken better personally. The sauce will be a little thin but you've saved some steps!

Oh, Minda, well I have a KILLER nutloaf recipe for you then, if you want it, complete with a mushroom gravy. I got it from Sarah Moulton's show on Food Network a few years ago. Or you could just look it up on their website...it's awesome! Just throw a zillion things in the food processor and bake.

I love and I've got my boys loving chicken breasts. I make them so many ways and the boys just love it. My sister's kids eat chicken nuggets and Easy Mac almost every night.
My favorite ways are...chicken breasts with fresh rosemary and garlic. That is Michael's favorite.
Taco seasoning...so easy.
Marinate in soy sauce and then coat with sesame seeds...new favorite
Sprinkle with Cajun seasoning
Roll in chopped pecans and just the tiniest bit of Cajun seasoning.
I used to have this old spice blend...I think it was called Key West and they really liked that on the chicken too.
Bake at 350 for 30 minutes.
And I really accomplish two things here...it's so easy and the boys think I'm some sort of Top Chef!

Not for the Faint of Calories
3/4 cup semisweet chocolate chips
1 stick (4 ounces) unsalted butter (plus a little extra)
2 large eggs
3/4 cup superfine sugar
3 tablespoons all-purpose flour
Optional - 1/2 cup white chocolate chips
Place baking sheet in an oven preheated to 400°. Butter four 2/3-cup ramekins and set aside. (I've used everything from Pyrex cups to cupcake tins, but ramekins work best)
Using a microwave oven or double boiler, melt together the semisweet chocolate and the butter. Set aside to cool. (I've never used a double-boiler for this)
In a separate bowl, combine eggs, sugar and flour. Add cooled chocolate mixture, and mix until blended. Fold in white chocolate chips.
Divide mixture evenly among ramekins and place on baking sheet. Bake until tops are shiny and cracked and chocolate beneath is hot and gooey, about 20 minutes. Place each ramekin on a small plate with a teaspoon and serve, reminding children that ramekins and chocolate are hot. (Sprinkle with powdered sugar if you want).
The big trick to these is not to overcook, they'll start to turn into actual brownies.

I cooked baked chicken breasts stuffed with cheddar and asparagus and mashed potatoes for dinner last night. I actually got the chicken at the grocery store already made up with the stuff inside in the meat dept. two HUGE breasts:blush: were only $3.50. Bargain!

We're HUGE fans of those Bertolli meals - they fit my four step rule:
1 - Take bag out of freezer
2 - Empty bag in skillet
3 - Cook
4 - Put food in bowl
And most of the varieties are downright GOOD.

Put meat in, add cut-up (big pieces not small) celery, carrots, potatos, and onions. Pour canned beef broth til covered. S & P to taste, add 1 bay leaf. Low for 8 hours.

Easy shredded beef tacos - get two cans of roast beef (Libby or Hereford brand, on the same aisle as the tuna and canned chili) and simmer with about 1/3 packet of taco seasoning. Just break up the beef as it cooks, and depending on how much liquid is in each can you may want to drain a little of it off. Chop up lettuce, tomato and shred some cheese, heat some corn tortillas on the griddle and you are all set!
A yummy side dish for tacos instead of beans or rice is something we call "conchas." Get a bag of small shell shaped pasta and chop some onion and garlic. Pour enough of the pasta into a skillet to cover the bottom of the pan and saute over med-high heat with some veg. oil for about 5 minutes. When the pasta starts to brown throw in the onion and garlic and saute for about 3 more minutes. Then pour in a medium sized can of tomato sauce and about half a can of chicken broth - however much it takes so that the shells are completely covered in liquid. Bring to a boil then turn the heat down to simmer, cover and cook about 25 minutes until the pasta absorbs all the liquid.

It's so funny that you said that - I was looking at that dog and going "aaawwww". That pooch reminds me of my Susie-Q, who was also a Springer Spaniel. The eyes get ya - they always look so pathetic.

I don't have a Trader Joes but the last time I was in DC we went here and it was awesome. Everything we bought was yummy and cheep. The wine is cheep too! Great place to shop, I just wish I had one of these near me.
I bet you'll get one sooner or later...they are popping up everywhere. A little over two years ago there were none in St. Louis and now we have 4. They are also a really good company--treat their employees well and give them a lot of say in how the store is run.
Last night I made homemade chicken and dumplings and tomato basil bread. It was awesome! :)

Lennon... what kind of cheese do you add to your Con Queso.. i have been trying a couple Mexican cheeses down here but have not found one that melts smooth and is white.... I love the Baja sauce at Macayos here, which is only in Arizona I think...... it is cream cheese, sour cream and jalapeno juice... with teeny tiny peppers chopped in.:w00t: but am looking for a true smooth white mexican cheese.

i melt down goat cheese and mix in cilantro, tomatoes, chile peppers (about four different types), and onions...its basically a simple salsa mix with goat cheese melted in.
its a recipe my abuelita gave me, but i.m sure if you go to wal-mart and look in the aisle where the juices and cookie dough is at you can find mexican cheese just for melting down. at least i think i saw some there...

Haha, that's my plan. My friend is coming to town from Richmond and we're getting together with this guy we've been friends with since like 2nd grade. It should be an interesting night. It's the only thing keeping me going today is the thought that tonight will be so awesome. And I can get trashed.

I got some FRANK'S® REDHOT® Buffalo Wing Sauce, mixed with some melted butter to take some of the bite out of it and it made for some yummy chicken breasts. Way tasty, think I'll go peek in the fridge and look for leftovers! :tongue_smilie:

I got some FRANK'S® REDHOT® Buffalo Wing Sauce, mixed with some melted butter to take some of the bite out of it and it made for some yummy chicken breasts. Way tasty, think I'll go peek in the fridge and look for leftovers! :tongue_smilie:

I just got done watching the woman on the FOOD channel that makes the semi- homemade meals. She made hot dogs wrapped in bacon, chili fries with cheddar cheese, and an ice cream dessert to die for...... and I think you could die,,, of a heart attack after eating that meal. But damn, it looked great when she was done.

The skirt steak was GREAT!! and I baked the Brownies about 8PM after it cooled off.... but I forgot--- We had strawberry jello with fruit cocktail in it! That was a blast from the past but my daughter is in a jello phase, (at 14) and i am trying to remember ways to make it funky.... she actually was freaked about the fruit.... like we invented it or something, so any one have good jello recipes??? I LOVE pudding. Not so much jello...although I do like that jello dessert with the pretzels on the bottom.
My husband is a jello lover though. In fact, I bought him a jello mold for his birthday. Felt like a 1950's housewife when I went out asking for one at the stores. They are hard to find!

I have no desire to eat jello or oatmeal again. We make it as treats for the apes, and after seeing so much of it on a weekly basis, I don't want to eat it.
Today the bonobos had treats of bamboo tubes filled with jello. They open the tubes with their teeth.:D

Confetti Jello
Make a box of strawberry-banana jello according to package directions. When set, mix with a fork to loosen and, using a blender, add Cool Whip. Mix in a can of fruit cocktail (drained really well -- or use a little less water when you make the jello), some mini marshmallows, halved maraschino cherries and sliced bananas. Put back in fridge for a couple of hours so the marshmallows can get a little soft.
PS: Does anybody else like the skin on the top of chocolate pudding? Yummmy.

It's in a cool part of town so I think my friend and I will take a stroll around. Also, she's paying! So I'm excited, I'm not sure what I'll eat, but it'll be good.

I misread a recipe for thimble cookies once. You cut them with the base of a thimble to make really tiny cookies. Apparently the recipe makes 50 dozen teeny little cookies. My oven was on for hours. Even halving the recipe doesn't help much--25 dozen is still a lot of cookies.

So I just got back from lunch. It was AMAZING. I had filet mignon tips over pasta in a lime cream sause. And for dessert we split this cheesecake made from marzcipone (I don't know how to spell it and don't feel like looking it up) it was the creamiest cheesecake I have ever had. We then walked around Shirlington, which is a cute little area with shops and restaurants. It's so beautiful outside and such a perfect day.

No problem, giff--I made it up for the same reason...I LOVE tamales, but I HATE wrapping all those suckers in the husks and all the steaming! Plus this one is a lot healthier than the recipe mi amiga Carmelita gave me, because hers is llena de manteca (filled with lard!) This one makes a sturdy, corn-flavored crust as opposed to a soft tamale corn filling that you are used to, but it is delicious all the same.
Basically, I take about 4 cups of masa, mix it with about 2 1/2 cups of vegetable broth and about 2 T olive oil, make a dough, and press it into two round cake pans (you may need a little more liquid since you are in a dryer climate). I always make two at a time. I press it up the sides too, like you would a deep dish pizza. I bake it in a 375 oven until it is set, maybe about 20-30 minutes? Just should feel firm to the touch, but not brown yet.
Then you can top it how you like. I like to make rajas, which are roasted poblanos, in a cooked tomato sauce. I take a few pounds of tomatoes and throw them in the food processor with a couple of onions and garlic and then fry the puree in a big pot with a couple of tablespoons of olive oil until most of the liquid is gone and it's a darker red...takes a while...I leave the lid on so I don't get spattered. Then I add salt and lime juice to taste, as well as my poblanos which I cut in strips. I add extra spice if the poblanos aren't to my desired heat level (I like it hot!) I then top the part-baked corn dough with the tomato sauce and peppers and top with jack cheese and bake until the cheese gets a little brown. It's good! And not too much work--you can really top however you want. This is just the favorite filling that Carmelita taught me.

My sister raised her own pig this winter and brought me a ham shank from said pig. I know alot of people raise their own meat in these parts, but I buy mine in the store. Am I a "ham snob" because I'd rather eat a store bought ham then the one she gave me?

Actually chooch - I just watched Gordon Ramsey's F Word where he had to slaughter 2 pigs he had raised for their meat. He has done a whole season talking about how home raised pigs make tastier meat. The better they are treated and they happier they are the more flavorful the meat.
With that being said, the shank you got might really surprise you.

But I too have a favorite kind of ham. I want a nice tavern ham that is a little salty. I can't stand all the maple or glazed and since I do the shopping I choose.

I too am particular about my ham... no spiral cut, glazed, ham store pig for me....
i like shank or butt. (hehehehe) and I put it cut side down in the pan and pour a 20 Oz, coke over it.... bake until it is done done done... then the best part... I thicken the gravy with cornstarch and water with a tad bit of mustard in it!!!!
OMR it is the best ham and gravy you EVER had,,,, and it works with the hams that are not fancy.... the ones i can afford.... yeah Easter....

My sister raised her own pig this winter and brought me a ham shank from said pig. I know alot of people raise their own meat in these parts, but I buy mine in the store. Am I a "ham snob" because I'd rather eat a store bought ham then the one she gave me?

But I hate ham regardless. Tastes like poo to me.

We sometimes eat free range meat...but every Easter fest in my life has been prepared by a family member. Guess when I have my own family (besides just me and my husband) I'll have to think something up besides ham.
Although today on Nigella's show she cooked a ham in Coca-Cola and it ALMOST looked good. I said almost. :) I love Nigella.

It is the simplest way to do it......
I unwrap the ham and remove all plastic and nets..
---- place the ham cut side down in a pan, that will allow it to be covered with a cover or tightly with tin foil.
---- pour the bottle of coke (20 ounces) over the ham and cover or seal.
bake at 350 until warmed up enough to eat... hams are cooked before you get them and if you bake them too long they get dried out.
----- remove the ham from the pan and cover with foil and a towel to stay warm...
Gravy....put pan with coke and ham juices on stove top.
-----mix a small amount of water (1 cup) with 1/4 cup of corn starch and a tiny bit of mustard ( to much mustard will ruin the gravy... I put in about 1 teaspoon)
-----whip water corn starch and mustard and pour into roasting pan...
-----bring to boil and thicken.
Not much else to it... i really like the ham because it is moist and not over
flavored with fake flavors and the gravy is soooo good.

We're going out to dinner tonight, not sure where, but I'm hoping Mexican. We found this place in Adam's Morgan that is soooo authentic, it looks like a place straight out of Mexico, and it's so good. Only problem, I can't remember the name. The make the best queso flameado con chorrizo...which is basically a bowl of melted cheese with yummy bits of sausage on top. Totally awful for you, but I've been all healthy for the past week or so. And I actually started using the gym in my building, which is really cool.

It's something my mom-in-law taught me in the restaurant business. It gives the salad a good mayo flavor but it still has zip. If the customer asks if it's made with mayo, you say 'yes' and vica-versa. I also put mustard in the potato salad..... only tuna in the macaroni salad and NO peas.

Two things: in my family, we throw all the Easter eggs in the woods behind my aunt's house after the festivities are over (we also do a reverse Easter egg hunt where the kids hide the eggs and the adults hunt...at 28, I am still a "kid") Anyway, the annual Easter egg hurl is a lot of fun, although someone often almost gets hurt. The animals get to eat all the winnings, too. She lives out in the middle of nowhere.
Secondly, speaking of chips, Pringles makes a jalapeno chip and it is freaking awesome. They actually taste like a jalapeno. They are not quite as spicy as I would like, but I am telling you, they rock!

Do you use the veggie cheese they sell by the veggies in the green wrapper. That cheese is the bomb. The have mozz, swiss, pepper jack, and cheddar. Plus it melts like real cheese unlike the rice kind

I don't know why, but that reminds me of a story my mom always tells about me. When I was about 2 I somehow got an egg out of the fridge. Probably slipping between her legs while she was cooking. A little while later she couldn't find me, I was sitting in this little corner between the couch and the wall munching on a raw egg. Luckily I turned out ok (I think).
That had absolutely nothing to do with easter eggs. This easter I'm probably not doing much, so I have nothing to contribute.

The first thing I'll be making is a chocolate coconut cheesecake, all homemade. The trick will be waiting until Sunday to taste it!

I had nothing for breakfast, and had a late lunch. Two croissants and a glass of chocolate milk. For dinner I had a corned beef sandwich ~ Lettuce, Tomato, banana peppers, Mayo, and Grey Poupon dijon mustard.
I'm probably gonna be a naughty boy and have a bowl of chocolate lucky charms.

I am so glad the coke worked for you... It has never let me down but you are right.... the wrong ham can ruin anything... I settled for steaks on the grill, mashed garlic potatoes, and asparagas..... something easy as I am in a band and was booked 7 AM until 12:30 Easter morning... I really though my hubby would have taken over the whole food thing but , ha, wrong as usual!!

I ate a handful of chocolate/vanilla rice crispies...I'm not a huge fan. I do sometimes like a bowl of chocolate cereal, but right now I only have healthy cereal.
Dinner last night? We had these subs, but we were still hungry so my friend made silver dollar pancakes. And we had to use rice milk because they were out of regular milk. It actually didn't taste bad at all.

Ahhhhhh, so yum. I grew up down the street from Silverado so I'd eat there all the time after football games and stuff. And last week we went for my mom's birthday to Carlyle and the waitress didn't put our order in right away so we waited a bit and got free soup. My mom and I got lobster bisque (OMG SO FUCKING GOOD) and my dad had the tortilla soup, which is amazing. Next I'm dragging my best friend to Coastal Flatts. I think Carlyle is my fave, but it's so hard to say. If any of you guys are ever in the Northern Virginia area GO TO ONE OF THESE RESTAURANTS. You will not regret it.

the good thing is we just go out for lunch and have the leftovers for dinner or snacking. i'll be having leftover Bennigan's blue cheese chips for dinner, and leftover potato soup and a roll for lunch tomorrow.
we went to a mexican place yesterday where I had an awesome spinach and cheese quesadilla and yummy guacamole, and to Panera on Sunday where I tried the new panini with grilled tomato and fresh mozzarella.
those blue cheese chips are the best PMS (or MS) food for me b/c they're the perfect combination of grease and salt. I'm not big on desserts. I'd rather have wine for dessert.:D

I LOVE breakfast for dinners, but the hubby dislikes all breakfast foods.:thumbdown: He won't eat eggs at all - not even fried rice b/c of the egg.

I'm going to just make store bought California Pizza Kitchen. But when we order out sometimes we go with the plain old Pizza Hut and the like, btu there are some great places. My one friend is in love with Ledo's and always gets it when she comes over. My other friends order from a place called Arman's I think...I'm not sure where they're located, but they deliver to the north Arlington area.
Where do you live (not so I can stalk, just because different areas have some cool places)? If you're in Alexandria/Fairlington area there's a place called Atlantis on King Street near Quaker lane. My parents had their first date there, and if I remember correctly they have good pizza. Scoty probably knows some good places too.

Is Vocelli's the place with the super huge pizzas? I remember I had a friend who liked their pizza. I think they have a location in Alexandria too, off Little River near Landmark. I'm sure there are tons of little places I haven't tried yet. DC has some great places for after a long night drinking. We love to stop at this place off Dupont (can't think of the name) and get some huge slices.

I like making English muffin pizzas as a treat. It's comfort food for me b/c my mom always made them for me when I was a kid. She just used a sauce of tomato paste and olive oil so that's what I use. They're very good.
my bf LOVES Hawaiian pizza which I can eat, but as an Italian, I find it wrong to put pineapple on a pizza.

Watched 'Ham on the Street' on the FOOD Channel yesterday. His topic was candy. He took a fondue pot full of caramel to the mall and fed people things like chicken and cheese dipped in it. Suprisingly, people loved it.

Is Vocelli's the place with the super huge pizzas? I remember I had a friend who liked their pizza. I think they have a location in Alexandria too, off Little River near Landmark. I'm sure there are tons of little places I haven't tried yet. DC has some great places for after a long night drinking. We love to stop at this place off Dupont (can't think of the name) and get some huge slices.
I actually don't know--I have never had Vocelli's. Now I'm hungry for pizza!

We have vocelli's pizza here too! When you call to order you are calling new york to their call center and they send your order through to the closest vocelli's. I just think there pizza is ok.

Salmon..... it's suppose to be really good for you. I haven't eaten it since I was a kid. I need your help. How do I buy it.... fresh? frozen? canned? ....and what's a good way to prepare it. I saw someone grill it on the food network. Any help would be appreciated.
Love. Salmon. Buy fresh filets, not frozen or canned. You don't need to remove the skin before cooking but you can if you want. Put a little olive oil and salt on it and grill (I use a George Forman) for about eight minutes per side, depending on how well you want it done. Serve with lemon or lemon pepper. Delish!

agree! (buy fresh filets) Target does have some good frozen ones that are already marinated though. I LOVE salmon too!
I either pan sear it or bake it in a foil pouch in the oven with butter spray and salt and pepper.
tonight I making dinner for the bf. Thick cut pork chops w/garlic mashed potatoes and gravy and tossed salad with bleu cheese and tomatoes.:)

Buy fresh, frozen if you have to, and Pacific tastes better than Atlantic. And buy WILD salmon, not farm-raised, or stupid Chilean farmed ("farm-raised" means entire live in a fish farm, "farmed" means started on a fish farm and released and re-caught).

I agree with everything being said so far. Don't overcook it...if it's nice and fresh, it doesn't have to have the tar cooked out of it. I like an Asian marinade too, nothing too strong though, and don't marinate long...maybe 15-30 minutes at most (something like soy sauce, sesame oil, a little garlic and ginger). Don't forget about those pesky pin bones if they aren't already removed!

Last night I made my world famous blue cheese-bacon burgers, caesar salad, and my also world famous baked beans which actually won me a blue ribbon once.
Tonight I am trying a new recipe in the crockpot. Chicken and rice with dry vegetable soup mix and chicken broth poured over it. I am hoping it'll be good but I'm not so sure. I will know in about an hour!

I've been craving a really good salad lately (like the kind Panera's used to have with blueberries and strawberries and poppyseed dressing) and I got hooked on Wendy's cranberry pecan salad with raspberry dressing. It's soooo good. I went to get one last week and I was told they were out of dressing. That's the best part! I went on Tuesday and was told they were out of dressing again! Then the manager told me they discontinued the salad already. Crazy!
So then I decided to go to Arby's yesterday to get their Martha's Vineyard salad... I was told they didn't have any because the produce guy only comes on Thursdays. WTF?
So I went to McDonald's today to get their Southwest salad and I have to say... HATE IT! It's so bad. The dressing tastes like someone took a packet of McCormick's taco seasoning and mixed it with ranch dressing. Ick.
Anyway, anybody know of any good places to get salads? Besides the kind I could make myself 'cause I'm too lazy to WORK at being healthy.

There was this place in Florida Mall that just made salads. It was pretty good. I think it was called Salad Creations (or Sensations). I dunno, but they had all the ingredients in these giant bucket things and you just picked whatever you wanted.
