Does anyone know how many members there will be in the jury, e.g. when the evicted houseguests will start being sequestered?

they usually put seven in sequester so if there are nine houseguests left, I'd guess it would start with the next evictee.

Yup. On Sunday's show, someone mentioned that whoever gets voted out this week will be in sequester.
